Chicken Fried Steak--A Healthier Version

Diverse agriculture (panhandle plains yielding cattle feedlots, ranches & large farms, to flat irrigated southwest growing cotton & wheat, to cross-timbered central sections emphasizing dairy, peanuts & hay, to a wetter eastern third producing soybeans, pecans & poultry) fosters rich culinary traditions. Chicken fried steak, barbeque pork, fried okra & squash, corn, biscuits, sausage & gravy, grits, cornbread, black-eyed peas, strawberries & pecan pie-combined via 1988 legislative resolution to create an official meal symbolizing Oklahoma foods!
