Wild Blueberry Gingerbread

The low-bush blueberry grown in Maine is valued for its small size and sweet taste. Maine produces more wild blueberries than any other state. Wild Blueberries are harvested commercially in Maine with over 70 million pounds produced each year. Wild Blueberries have the highest antioxidant capacity, per serving compared to most fruits. This recipe was in one of Mildred Brownie Schrumpf's cookbooks. Brownie was a 1925 Home Economics graduate of the University of Maine.
